Pear and Brie Panini with Caramelized Shallots and Walnuts
Happy December everyone! Just popping in to wish you all a very happy start of the month and share with you a quick and tasty lunch recipe. Maybe you're are out of leftovers and searching for something easy and satisfying. Or just looking for a yummy meal to quell your winter cravings. A little melty cheese, sweet pear, and crunchy bread should do the trick!
I first made this panini a few weeks back, searching for something savory to do with pears. Paninis are much needed on these colder days when you want something more than a regular cold sandwich. The brie melts dreamily and the pears soften slightly as they cook - a very blissful sandwich indeed.
I've always loved exploring different flavor combinations. With something easily put together, like a panini, it's a good excuse to add in fun flavors and experiment with recipes! When the refrigerator seems empty, a bit of cheese or half a pear can morph into a very scrumptious meal. It just takes a little inspiration.
If you are short on pears, slices of apple make a wonderful substitute! Add a drizzle of honey for a sweeter version or a slice of prosciutto for a more savory meal.
Going into December, I'm hoping to bring you lots of comfort food, holiday sweets, and a homemade gift idea as well. Also, the end of the year is coming up quick so keep an eye out for something special to celebrate a new year - and a new decade.
Pear and Brie Panini with Caramelized Shallots and Walnuts
ingredients
4 slices of sourdough bread, or any crusty or rustic loaf of your choice
1 pear, cut into thin slices (4-6 slices per panini)
4 oz brie, cut into slices
2 shallots, thinly sliced
a few tablespoons of toasted walnuts
2 sprigs of thyme
2 tablespoons butter (+ more softened butter for toasting the paninis)
method
Sauté the shallots and thyme in the butter until golden and shiny, about 10 minutes. Set aside.
Turn on the panini press or pan to medium heat (I usually settle for somewhere around the middle setting so the cheese fully melts and the bread crisps).
On one slice of bread, lay down 2-3 slices of brie, or as much as needed to cover the slice. Then arrange your pear slices and top with the caramelized shallots and a sprinkling of walnuts. Place your other slice of bread on top and repeat for other panini.
Spread each side of the panini with butter. Cook until the brie is melted and the bread is golden and toasty.
